Amatriciana with spaghettoni

¼ cup (60ml) extra virgin olive oil3 short-cut bacon rashers (105g), chopped1 medium onion (150g), chopped2 cloves garlic, crushed2 x 400g cans cherry tomatoes½ tsp chilli flakes1 tbsp red wine vinegar400g spaghettoni⅓ cup (25g) finely grated parmesan⅓ cup (80g) cream cheese or ricottachopped flat-leaf parsley, to serve, optional
1 Heat half the oil in a large frying pan over medium heat; cook bacon, stirring, for 5 minutes or until browned. Using a slotted spoon, transfer to a plate.
