BEAN AND BEEF BURRITOS

Spray oil1 red onion, sliced500g (1lb) minced beef2tsp ground coriander2tsp ground cumin½tsp chilli flakes2tbsp sun-dried tomato paste300ml (10½fl oz) hot beef stock400g (14oz) tin pinto or kidney beans, drained and rinsed50g (2oz) sliced jalapeños from a jar, drained and chopped20g (¾oz) fresh coriander8 small flour tortilla wraps45g (1½oz) reduced-fat mature Cheddar, gratedLime wedgesSoured creamAvocado, choppedTomato, lettuce and red onion salsa
1 Spray a large, heavybased pan with oil and fry the onion for a few minutes, to soften. Add the beef and cook for about 5 minutes, to brown it all over.
