GRILLED FISH

INGREDIENTS
Sea saltBlack pepperJuice and rind of 1 lime2 tbsp dill, finely chopped1 tbsp coriander, chopped4 tbsp avocado oil1 whole fish, gutted
METHOD
1. Preheat oven to 180°C. Mix salt, pepper, lime juice, rind, dill, coriander and avocado oil in a bowl.
2. Make shallow cuts into the fish, then rub the herb mixture into the cuts.
3. Cook in the oven for 20 minutes. Serve with roasted potato wedges.
EDITOR'S TIP
Seafood is delicate and easily falls apart. Grill fish with its skin on to keep it from tearing.
