THE Recipes Toasted-Pecan Shortbread Cookies with Buttercream Filling p.84 Makes approximately 24 2¾ cups all-purpose flour½ cup finely chopped toasted pecans¼ cup plus 1 tablespoon sugar, divided¼ teaspoon salt1 cup unsalted butter¼ cup heavy whipping cream2 egg yolks1 teaspoon vanilla bean paste*Buttercream Filling (recipe follows) 1. In the work bowl of a food processor, pulse together flour, pecans, ¼ cup sugar, and salt. Add butter; pulse until mixture is crumbly. In a small bowl, whisk together cream, egg yolks, and vanilla bean paste. With food processor running, slowly pour mixture through spout, and pulse until mixture forms a ball. Place dough between 2 pieces of parchment paper, and roll to a ¼-inch thickness. Freeze for 30 minutes. 2. Preheat oven to 350°. Line 2 baking sheets with parchment paper; set aside.…

On the shores of Lake Champlain, in picturesque Shelburne, Vermont, the historic landmark Shelburne Farms beckons sojourners to explore a sprawling site that is as much a 1,400-acre playground as an educational campus. Dr. William Seward Webb settled in a bucolic valley of Northern Vermont in the 1870s with his bride, Lila, the daughter of railroad magnate William Henry Vanderbilt. The Webbs amassed 3,800 acres and envisioned transforming the scattered parcels into a model of modern agriculture. They commissioned the father of American-landscape architecture, Frederick Law Olmsted Sr., to conceptualize the space. Embracing Shelburne’s natural topography to evoke a sense of wonder at every turn, the designer divided the area into sections of farm, forest, and parkland. THE Recipes Pomegranate-and-Pear Sangria p.75 Makes 1 quart (4 to 6 servings) 1 bottle Shiraz2 cups pomegranate juice½ cup apple brandy*½ cup orange liqueur¼ cup Simple Syrup (recipe follows)¼ cup pomegranate arils1 pink grapefruit, sliced1 orange, sliced1 green pear, sliced1 red pear, sliced1 cup muscadines, halved, seeds removed In a large pitcher, whisk together wine, juice, brandy, liqueur, and Simple Syrup. Add pomegranate arils, grapefruit, orange, green pear, red pear, and muscadines. Cover and refrigerate for at least 4 hours to overnight. Serve chilled.
