“We just opened our 18th concept,” says Mark Canlis, co-owner of Wine Spectator Grand Award–winner Canlis in Seattle. Since their dining room closed, in mid-March of 2020, Mark, his brother and co-owner Brian, and the team have been busy reinventing their fine dining restaurant to cater to the changing needs of their customers.
The latest concept, Canteen, is billed as “outdoor, casual, smokehouse fare.” It’s the newest addition to Camp Canlis. The “camp,” which lies just outside and above the restaurant, is also home to the Yurt Village, offering fine dining meals in private yurts, and the Treehouse, on the roof of the restaurant.
