Nonstick cooking spray8 large eggs½ cup low-fat cottage cheese1 tsp curry powder Kosher salt and pepper1 15.5-oz can low-sodium chickpeas, rinsed3 scallions, white and light green parts finely chopped, dark greens thinly sliced3 cups watercress (tough stems discarded), roughly chopped and divided2 Tbsp mango chutney4 slices whole-grain bread, toasted Olive oil, for drizzling
