Try them as a: TANGY COCKTAIL In a shaker, muddle 2 kumquats (halved and seeded) with 1 tsp maple syrup and ½ tsp grated ginger; add ice and 1½ oz bourbon and shake to chill. Serve over ice. SAVORY SAUCE Heat 2 tsp olive oil on medium-high. Brown ½ cup kumquats (thinly sliced) 2 min. Add 3 Tbsp white wine, 1 Tbsp water and 1 Tbsp rosemary (chopped); simmer 1 min. Off heat, swirl in 1½ Tbsp cold butter in chunks. Serve with chicken, lamb or pork. ICE CREAM TOPPER Combine ½ cup honey and ⅓ cup water; bring to a gentle boil. Add 1½ cups kumquats (sliced).
